Ingredients

  • 1 lb chicken breast or thighs
  • 1 tbsp extra virgin olive oil
  • Himalayan Crystal salt
  • 2 tsp dried ground sage
  • 1 tsp ground allspice
  • 1 tsp ground mustard
  • Fine ground black pepper

Instructions

  1. Preheat oven to 400 degrees, using a convection or roasting setting if available. Place chicken breast on a small baking sheet or glass pie dish. Drizzle with olive oil, then season liberally with salt.
  2. In a small bowl, combine the allspice, sage, mustard, and pepper. Using your fingers, lightly dust the seasonings over both sides of the chicken.
  3. Roast chicken in the center of the oven for about 18-20 minutes, or until fully cooked in the center (165 degrees). Remove from the oven serve immediately.
